I have a confession to make…
I HATE vegetables!!!!
Shocking, I know.
Growing up in the Midwest, we were definitely a meat and potatoes kind of family. Actually, I can’t remember a single meal from my childhood where there was broccoli involved.
As a parent, I know my son should be eating his veggies and that I should be leading by example.
So what better way to eat those nutritious, not so delicious, cruciferous vegetables than to disguise them as something else?!
I was beyond excited when I found something new in the freezer at my local grocery store!
One of our favorite meals is chicken teriyaki with fried rice. I decided to try my hand at fried rice cauliflower and it was a huge hit! I wanted to share the recipe with everyone so that if you struggle to get yourself or your kids to eat their veggies you might try this fun new way to sneak them in!!
I started off by sauteing chicken breast cut into bite sized chunks. I used a non-stick pan so I didn’t need to add any oil or butter. Once the chicken is cooked through you can add your favorite teriyaki sauce. I also add a little sezchuan for an extra kick!
In a separate pan, scramble one egg with a little salt and pepper to taste. Set the cooked egg aside in a bowl.
Then saute half of one onion and 2 cloves of minced garlic in a small amount of sesame oil. When the onions are translucent add your riced veggie mix, 3 tablespoons of soy sauce, and 1 tablespoon of oyster sauce. Stir often until everything is warmed and combined.
Mix in your eggs and your veggie fried rice is done!!
I topped it with the teriyaki chicken and we dug right in. We didn’t even miss the rice!

*Parenting Pro Tip* Your kids will eat anything if you give them chopsticks!!
