Artichoke & Spinach Dip
Pre-Heat oven to 350F
Prep time: 15 minutes
Cook time: 30 minutes
1 package cream cheese
1/2 cup sour cream
2 cups shredded cheese
1/2 bag of Spinach
2 cups artichokes
1 tsp. Salt
1 Tablespoon granulated garlic
2 dashes of basil
1 dash pepper
Steam the spinach on the stove until completely flaccid. Put the cream cheese in the microwave and soften. Drain the artichokes (I personally use the Private Selections brand of cooked artichokes in a jar, I use 2 jars= about 2 cups), I squish the artichokes a bit so they are not so big.
Once cream cheese is softened, add the sour cream and mix well with a whisk- pop the mixture in the microwave if it is too chunky or too cool after adding sour cream, you want the creamcheese/sourcream mixture to be smooth. Add all spices and mix.
When the spinach is steamed, add to creamcheese mixture and mix well. Add artichokes and stir, then add most of the shredded cheese and stir (I personally use the "Italian" blend, because it has parm., provalone, mozz., and romano cheeses) save about 1/2 cup of the cheese for the top!!!
Once you have everything mixed together, plop that dip into a baking dish and add the rest of the cheese to the top.
Bake at 350 for 30 minutes, or until cheese on top has browned a bit.
