1 Cup- all-purpose flour
1 Tablespoon- sugar
1 Tablespoon- baking powder
1 Tablespoon- baking soda
1/4 Teaspoon- salt
1/4 Cup- milk
3/4 Cup- eggnog
1 Tablespoon- water
2 Tablespoons- softened salted butter (or cooking oil of some kind)
Preheat pan or skillet on medium heat.
Mix the flour, sugar, salt, baking powder, baking soda, and spices together in a large to medium mixing bowl- set aside.
In a small bowl, beat the egg until smooth- set aside.
Mix the milk, eggnog, and water. Add the beaten egg, mix.
Combine dry and wet ingredients together, mix. Add the butter, mix.
To test if the skillet/pan is hot enough, flick a drop of water at it. If it sizzles and vaporizes immediately it is ready. Pour desired amount of batter onto preheated surface. Flip the pancake when the it starts to bubble and the edges look dry. Pancakes take about 2-3 minutes to cook - cooking time depends on size of pancakes.
I personally like to serve the pancakes with melted butter and maple syrup.
