What a fun and busy week! Christi is my BEST girlfriend from high school and she celebrated her Birthday this weekend! We both had the day off on Friday, January 27th and wanted to have a fun 'Girls Day' to celebrate her! We started off by going to Black Eye Coffee in CapHill (800 Sherman Street) to grab a breakfast sandwich and some tasty drinks! It is so cute on the inside and very cozy. The food and tea was fantastic!
Next, we went to The Source (3350 Brighton Blvd) to see...everything! They have 2 awesome restaurants, Crooked Stave brewery, a butcher, florist, bakery, novelty/jewelry/art shop, liquor store and a coffee shop called BoxCar. They introduced me to my new obsession. A Peppermint Tea Latte with steamed almond milk and just enough simple syrup to make it taste like magic.
I had the pleasure of meeting Robert (General Manager) and Will (our fantastic server) at the new Blue Agave Grill in Denver. They are on 16th Street Mall, (right next to The Cheesecake Factory) and boy were we in for a treat!
Christi and I wanted to try something new for her celebratory lunch and we chose wisely. The restaurant has a great layout with a fun and welcoming environment.
The entire menu is incredible, so we asked Will what his favorites were! He helped us choose the Black and White Nachos as our appetizer.
Christi chose Southwest Pork Medallions and I ordered the Tacos En Fuego.
They have an amazing selection of fun margaritas for only $2.50! Just the right size to enjoy during lunch! This was the Spicy Cucumber Margarita. We also tried the Muy Macho Jalapeno Margarita! YUM!
These aren't your normal pile of nachos. Every chip is covered with Shrimp & Lobster, Chipotle Cream, Black Beans, Monterey Jack, Asadero Cheese, Corn Pico De Gallo & Guacamole in the middle. They flavor combinations and creamy texture with a bit of bite from the shrimp was perfect. It was hard to stop eating them to save room for our actual entree!
While we were enjoying our appetizer, I smelled something incredible as another server walked past us with some dishes. I asked Will what it was! I was originally going to order the Coconut Shrimp Tacos (If you know me, you know I LOVE TACOS!)
Will said it was the Tacos En Fuego! These guys pour a shot of Tequila over the super hot cast iron skillet and light it on fire! EN FUEGO! So fun! The Tequila-Fired Tableside was so cool to see!
The Marinated Skirt Steak is perfectly charbroiled with Onion, Bell Pepper (I opted out of the peppers and added grilled pineapple) topped with Corn Salsa! The tacos are served with Serrano Avocado Salsa, Flour Tortillas, Cilantro Rice and Black Beans. Those little grilled onions and pineapple bits are flavor crystals that made these irresistible! I want to eat them all over again right now!
And then... there is DESSERT. What is a Girls-Day-Out-Birthday-Lunch-fest without the desserts, right?!
I don't really know what to say about these, other than you MUST visit the Blue Agave Grill on 16th and Lawrence to eat these yourself. These were the perfect ending to a perfect meal.
The top photo is their award winning Toasted Coconut Blonde Brownies served warm with Pecans, Toasted Coconut, Caramel Rum Glaze and topped with Vanilla Ice Cream. The glaze that surrounds this mound of warm coconut goodness is almost like a crust that you have to crack to get to the hidden treasure inside. This dessert is now one of my top favorites in Denver and I cannot wait to go back and enjoy it again!
The second dessert is the Chocolate Peanut Butter Mousse Cake. This is gluten free folks (TONS of amazing GF options on their entire menu, BTW). This chocolate ganache covered delight is made from scratch by Becca's Gourmet in Wellington! Another reason to love and support this locally, family owned restaurant! They source locally which is so great! Inside of that chocolate coating is a Chocolate Sponge Cake with Peanut Butter and Chocolate Mousse sitting on top. How can you say no to anything with chocolate and peanut butter?

Denver! So busy, full of life and hundreds of things to do every weekend! The Denver Metro Area is one of the fastest growing areas in the country and people cannot wait to move here.
Being a Native, I often take the wonderment of this state for granted! Recently, I was with a group of friends at Dry Dock Brewing Co (15120 E Hampden Ave, Aurora, CO 80014) and we were talking about all of the things that someone MUST do in our region! Here are some things we came up with.
1. Red Rocks Amphitheater (918300 W Alameda Pkwy, Morrison, CO 80465)
This area is not only the place to be for any concert you could possibly catch, but they also host tons of other events. Anything from Yoga, Easter Sunrise Service, a summertime favorite for Film on the Rocks (when the sun sets, they feature fun classic movies like the Goonies, Beetlejuice, The Big Lebowski and Deadpool).
2. Casa Bonita (Lamar Station Plaza, 6715 W Colfax Ave, Lakewood, CO 80214)
Known for their cliff divers, giant gorilla on the loose and Black Bart's Cave, this is a great place to go with friends or family. If you were a kid in the 80's or 90's, you likely had your birthday party here. Just raise that little red flag for more sopapillas, please!
3. Have a Sunday Funday at Lakeside Amusement Park. (4601 Sheridan Blvd, Denver, CO 80212)
This historical amusement park has been open since 1908. Originally named White City, it was opened and spearheaded by prominent Denver brewer Adolph Zang.
My Uncle Mark worked here when I was a kid and I remember going on dozens on rides and coming home with my arms full of stuffed animals. Check out the Wild Chipmunk ride!
4) Profess your love for Green Chile!
Just about every restaurant has a signature Green Chile that they will smother your favorite dish with! Hip RiNo restaurants, staple hole-in-the-walls scattered throughout Denver and specialty small batch businesses!
Our favorite is Ele's Sooo Good Green Chile based in Centennial, CO. It is quite possibly the best Green Chile sauce around and everyone in Colorado thinks so. The owner, Eleen, won 2 first place awards at the Colorado Chile Festival. Try it for yourself - www.ElesSoooGood.com
5) First Friday Art Walk (Santa Fe Dr and 10th Ave - ish)
On the First Friday evening, every month, the dozens of eclectic galleries open their doors for all to visit. From fine art to large artist co-ops, you can meet and greet with local artists and purchase one of their pieces to hang and call your own. This is a definite must-do for me every year. The block parties are so fun on a warm summer evening with food trucks, music and street buskers galore. The people watching is sometimes just as entertaining!
6) Take a stroll around Union Station (1701 Wynkoop St, Denver, CO 80202)
Union Station is sort of like Denver's living room. Recently renovated, this is a 100 year old historical landmark that visitors and locals all adore. You can walk around in the train station, eat at any of the surrounding amazing restaurants or grab an ice cream treat at MilkBox Ice Creamery. With tons of patios, a lit up fountain and the busy energy of the area... this is a super fun area to check out.

Happy New Year! It is officially 2017 and I am trying to wrap my head around how the Y2K scare was 17 years ago! I posed a question on my Facebook page asking where they were the night that we changed from 1999 to 2000. There were some funny answers, including some of my friends parents confessing that they filled bathtubs up with water! I think that was the first "viral" hype we encountered in the beginning of what would eventually become a social media and technology driven society.
Here we are 17 years later on a thriving social media and communication platform, everyone consumed by viral stories (Hello... Mariah Carey) and hundeds of new outlets to share our lives, favroite cat videos, keeping in touch with far away friends & family, and sharing breaking news!
It is fascinating to me how things have evolved.
With that said, at the beginning of each new year, we see so many New Years Resolutions and self made promises to have a fresh start! This year, I feel like so many people are focusing on bigger goals, getting back on track and not worrying about the "New Year, New You" facade.
I can personally attest to that mindset too!
I have HUGE goals that I want to achieve, but they aren't any different than what I had set out for myself in 2016. I just need to work harder to hit them.
However, the "New Year, New You" clean slate is just that... a clean slate. 2016 was a rough year for a lot of people and that is all now in the past. I think we are all excited to welcome 2017 and see what is has in store!
