Executive Chef Nicholas Kayser has cooked up a menu of romantic dishes available February 9 – 17. Start with an order of braised oxtail raviolo served with sauce American, toasted garlic and micro beet greens. Specials for the holiday include Chef’s prosciutto wrapped halibut with Vesta’s 20-month house cured prosciutto, halibut filet and cauliflower risotto. On Valentine’s Day, the tag-team operations of Chef Michael Gibney and Chef Jeb Breakell are turning out a show-stopping, five course, three options per course menu of bold and inventive dishes, flavors and tastes that are worth swooning over. For starters, diners can choose from the Black Bass Crudo with whey, strawberry, celery and basil; the Cucumber & Celery Salad with sunchoke, apple and pickled cherry, or adventurous diners might opt for the cheekily named "Sex on the Bay” Oysters with uni, tobiko and fennel for an additional $8. Second course features choices between the Chorizo & Clam with laughing bird shrimp, marcona almond, crouton; Salt Baked Turnip with seaweed, sesame, miso, bonito or the Farmer's Cheese with savory cured elk heart, charred onion and chicharron. Third course choices include Campanelle Pasta Primavera, Rigatoni Carbonara or Acquerello Risotto with squab, celeriac and cocoa, and fourth course features choices of Wagyu Beef with brie and oyster emulsion, bok choy, pickled Fresno; Roasted Chicken with foie gras stuffing, pommes aligot; or a tender, Steamed Halibut with roasted beet and aromatic white truffle (for an additional supplement).
