I always see the Buzzfeed Tasty Facebook videos online and start feeling super hungry. They all make an impression on me and I think "Man, I would sure love to make all of these dishes one day." They inspire me to want to try new things or have me craving dishes that I should not be eating very often. So, the other morning I was trying to figure out what to have for breakfast and remembered seeing a video for pancakes made with bananas, oats, and egg- THAT's IT. I figured why not try this out. It seems simple enough and healthy. Since we have all these ingredients at home there is really nothing to lose other than a banana, oats and an egg.
So, I mashed my single banana, whisked in a single egg and added in a packet of oats with flax seeds. I also added vanilla and a dusting of baking powder because I did not understand how this would hold up if there was not baking powder. I let the mixture sit for about 5 minutes and then scooped the batter into dollar sized pancakes on a skillet. They cooked up nicely and tasted delish! The texture is not as light as a *regular* pancake but these are definitely ones I will make again for myself.

1 ripe banana (mashed)
1 egg (beaten)
1/4 cup of oats
a dash of vanilla
a dash of baking powder
Mix everything together and let sit for about 5 minutes. Scoop mixture onto greased griddle or pan and cook until browned and able to flip. Enjoy with syrup, fruit or topping of your choice!
