Over the weekend, I finally made salmon for the first time! It had always been something I wanted to make but the boyfriend was never a huge seafood fan. So after some convincing, I was finally able to try a new recipe and both the "picky eater" and I were in awe! This salmon came out to be so juicy and so tender! The fish was literally falling off my fork. This was such a quick meal to make too! This time, I had placed the salmon wrapped in aluminum foil in the oven, but next time I definitely want to try cooking it on the stove top for a more grilled taste. It is perfect for those rushed late nights, when you need to quickly put a meal on the table. Overall, this meal was pretty healthy and definitely a good switch up from our usual go- to chicken dishes. Here is the recipe I followed, and I hope you all try this too!
Garlic Lemon Butter Salmon Recipe:
Prep Time 10 Minutes
Cook Time 20 Minutes
Toal Time 30 Minutes
1 lb salmon fillet
2 teaspoons minced garlic
3 teaspoons lemon juice
3 teaspoons honey
2 tablespoons butter melted
3 dashes of pepper
1/4 teaspoon of salt
1 tablespoon of parsley
1. Preheat oven to 400F.
2. In small bowl, mix the garlic, lemon juice, honey, butter, pepper, and salt until it is all combined well.
3. Rinse salmon with cold water and pat dry with paper towels. Transfer salmon to big sheet of aluminum foil and drizzle the garlic lemon butter mixture on the salmon. Make sure it is coated well. Top with parsley. Wrap the salmon tightly, then place on a cookie sheet. Bake for 20 minutes, or until salmon is cooked through.
4. Unwrap the foil, juice over with the 1/2 lemon and serve!
Welcome all readers to my first blog post! I am very excited for this new experience as I join Housewives in the City. I thought I should share more about myself so you could all know me a little better! I have lived in North Jersey for pretty much my whole life, and in my 22 years of living, I'd have to say I've had plenty of adventures through visiting the different cities in New Jersey. I will be graduating in the Spring from William Paterson University with a degree in Public Relations and a minor in Health Studies. For those who are unfamiliar with Public Relations, this career field helps businesses or individuals create a positive reputation with the public by using the perks of the media, social media, and in-person engagements. I love this career so much because it is so broad and can be incorporated into any field. There's public relations in the medical field, fashion industry, hospitality, celebrities... the list goes on! There is always a new task and every day is never the same in the public relations world.
Other than being a full- time student, I am working two part time jobs (besides HITC.) I intern at a Public Relations firm in New York City two times a week and I have been working at Blink Fitness for almost a year now. Although my shifts start at 5 in the morning, I have to say working at Blink Fitness is such a rewarding job! I have met so many wonderful people whom I've created so many relationships with. They look forward to seeing me every morning , as much as I look forward to seeing them! I also have learned so much from the members, whether it was about personal life experiences or how to do the correct form during an exercise. With school starting soon, I sadly do not work as often as I used to and one day I will have to leave my Blink family all together, but I created amazing friendships with the members and my coworkers and will share my memories with them forever!
When I find some free time, I love to find new movies and shows to watch with my boyfriend! This is usually how we spend our Friday nights! After our busy weeks, we order from our favorite local wing shop and find a new movie to watch. We recently watched Bird Box on Netflix and WOW!! Sandra Bullock did amazing! We are running out of movie ideas, so comment below any of your suggestions!!
