a few doors down from me lives an amazing woman who has traveled the world... and it just so happens that she is also a classically trained chef! we both have middle eastern bloodlines (she's Egyptian and I’m half Lebanese - can't we all just get along?) and she cooks the most incredible food ... I seriously go there every night for a little nibble (or entire plate) of whatever she is making.
recently, she served an eggplant and tomato mush that was to die for. it's not really a dip or spread... but you eat it with bread. since I had just gone to the farmer's market, i asked her to come over and show me how to make it.
what you need:
2 pretty good sized eggplants (2 for $1 @ the farmer's market)
3 tomatoes ($8 @ whole foods - total rip off)
3 cloves garlic (i used the frozen minced cubes from Trader Joes)
1/4 cup white wine vinegar
peel the eggplant. i apologize for not having pics of the gorgeous farmer's market eggplant. it wasn't until after I peeled it that I thought: "hey, i should put this on my blog."
cut into 1/4-1/2 inch thick slices and sprinkle generously with salt. let stand in a colander for about 30-45 minutes.
pour about (i never measure anything - unless baking) a 1/2 cup of cooking oil in pan until very hot. fry the eggplant in a single layer until golden brown on both sides, 1 to 2 minutes per side. the eggplant absorbs A LOT of oil. you may need to add more towards the end of your slices. place on paper towels to drain and then layer the eggplant into a glass 13x9 baking dish.
once all the eggplant has been fried, add about 2 tbsp of olive oil to pan. then, get the most expensive tomatoes you can find at whole foods and dice them. add tomatoes to the olive oil and let simmer about 4-6 minutes until soft and mushy. add garlic and vinegar and remove from heat. pour tomato mixture over eggplant.
let cool and then refrigerate for at least one day. serve cold or at room temperature. this makes a not too unhealthy side dish or appetizer :) and if you're not carb-conscious, eat with bread!
