Ever wonder how you can kinda eat pasta in a healthier way? I heard about this Fiber Gourmet Light Penne at BlogHer last year and I finally gave it a chance. I actually overheard lots of people (who were already familiar with the brand) say that they live by it and order it on Amazon. I'm not sure where you can find it locally.
While the pasta was boiling, I sauteed some chicken and onions in olive oil. Once they were cooked through, I added fresh tomatoes, let simmer, and then tossed with the cooked pasta. Of course, I topped it with Parmesan cheese.
The key to making good pasta: ALWAYS salt your water.
We all liked it and my family probably would not have known it was any different than the usual pasta. Plus, with 40% less calories -- it's guilt-free eating. If you have any favorite pasta recipes, feel free to share in the comments below :)
