Last week, I came home to a package with boxes of San Giorgio Pasta waiting for my on my front porch. I was excited to partner with San Giorgio for this post... If you know anything about living with two growing boys in your house, pasta is a go-to when I'm cooking for their empty bellies!
We actually rarely do pasta with red sauce in my house. I grew up on tomato based sauces, but now that I'm the cook in the kitchen, I prefer to use fresh ingredients to toss into my pasta. Last night for dinner, I made San Giorgio Angel Hair with sautéed chicken, onions, mushrooms, tomatoes, and garlic. I sautéed the pasta in olive oil, white wine, and parmesan cheese, and finished with fresh basil.
One thing about me, is that when I cook, I NEVER use recipes. If you're starting with foods that taste good and are good for you, it's hard to go wrong. However, I do have three secrets when cooking pasta:
Secret #1- I always add a little chicken base and olive oil to my pasta water. Sometimes I'll add salt, but if I'm using chicken for my meal that night, I replace the salt with the chicken base.
Secret #2 - I only cook the angel hair for about 60 seconds in the pasta water, then I combine the fresh ingredients in my sauté pan with the strained pasta and let the pasta finish cooking for 2 more minutes in the sauce mixture to absorb the flavors.
Secret #3 - Reserve about 1 cup of the pasta water before you strain the pasta and add it to your sauté pan. I am not sure why, but my mom and gram always did this and so I keep the tradition alive.
