As someone who works from home, it's been all too easy to slack on healthy eating habits. I've dashed off to WaWa for lunch more times than I can count and sometimes stop at fast food drive-thrus simply because it's more convenient than interrupting my day to whip up another meal.
I've promised myself lately that I'm going to start eating healthier... for real this time! Today, I made a large salad that I can put into tortillas for wraps throughout the weekend.
For anyone that knows me, I'm not a huge salad fan. I look at salad and compare it to a tasty burger ... it rarely wins. I scoured Pinterest for some salad inspiration and came across this Arugula Salad that I put my own twist on.
2 small apples
1/2 can of garbanzo beans
Tablespoon olive oil
Teaspoon Ranch Dressing
Dash of Salt & Pepper
Peel and chop the apples and drain the beans and then place into a large mixing bowl. Rinse the arugula and add to the bowl. Add oil, dressing and seasoning and toss well.
Verdict: The salad was the perfect mix of sweet and savory and I'll be eating these wraps all weekend long!
This weekend, the weather here in the Philly area was too beautiful to pass up and so I visited Longwood Gardens' Orchid Extravaganza.
After lunch in their cafe (Kennett mushroom & creme crepes with a lo mein micro salad... yum!), I popped into the Conservatory to check out the Orchid Extravaganza. As I opened the glass doors into the East wing, the fragrance of the flowers hit me and convinced me that I need to start purchasing orchid flowers. The scent is amazing!
When you walk in, you're greeted by a huge arch constructed of 600 white hybrid orchids. As you continue to walk, there are various breeds of orchids throughout and in the Exhibition Hall (my favorite), there were five orchid orbs floating above the Fern Floor. If you look closely at my photograph of this Hall, you'll notice that they also constructed a beautiful orchid curtain made up of 250 orchids. The Longwood Garden's staff outdid themselves with this exhibit - every nook and cranny held a variety of orchid to appreciate, artfully arranged.
If you get a chance to visit the Orchid Extravaganza, I highly recommend it. The event runs through March 27, 2016.
I know that some people aren't big fans of Valentine's Day, but I'm not one of those people. Even though I think you should celebrate your relationships with others every day, it's still special to surround yourself with love on Valentine's Day.
Normally, my boyfriend and I try to come up with something fun and exciting to do, but this year I wanted to do something low-key as I'm just getting over a cold and feeling a little 'blah'. And you know what? It was perfect.
We spent the day doing a little shopping (I got a new workout top, I'll be sure to share a picture soon), watching The Walking Dead on Netflix (we're on Season 5!) and eating breakfast for dinner at the local Happy Days diner.
Of course, we capped off our night with a milkshake (him) and a Root Beer Float (me). Yum!
