Last week one of my best friends had her baby shower. I absolutely love that while I'm finished growing my family, my younger friends are still having babies. All of the chubby cheeks and smiles with none of the sleepless nights. I imagine this is what being a grandparent is like, only without all of the candy and cookies you get to give them.
Since my friend and I are so close I wanted to be involved in the planning, including the food (of course) so I got to work trying to create something really great. We had recently had taco night at our house, and I had the idea of working those flavors into a standard pasta salad. Its not a lot of chopping (always a plus) and super easy to throw together the night before and let the flavors get going in the fridge. As with anything southwestern, I'd usually add cilantro but skipped it because so many people don't like it, but if you're a fan I'd say go for it. You can add more or less onion or bell pepper as desired. I don't have a lot of exact measurements but I don't think this calls for it. Throw stuff in until it looks good, taste and adjust seasoning.
This got rave reviews from Mommy-To-Be and everyone else at the shower. They nommed it up and left me with a clean bowl. I'm making 2 batches of this for the holiday weekend so we won't run out!
Here is the super simple recipe:
1 16oz. box cooked tri-color rotini
2 cans black beans, drained and rinsed well
1 small bag frozen corn (I used white sweet corn)
1 can diced tomatoes with green chiles
1/2 cup red or orange bell pepper, diced
1/2 cup white onion, diced
4 fresh green onions, chopped (optional)
1 bottle of Zesty Italian dressing.
Mix everything together and refrigerate for at least 2 hours. Try not to eat it all if you're bringing it to a party.
