As someone who works from home, it's been all too easy to slack on healthy eating habits. I've dashed off to WaWa for lunch more times than I can count and sometimes stop at fast food drive-thrus simply because it's more convenient than interrupting my day to whip up another meal.
I've promised myself lately that I'm going to start eating healthier... for real this time! Today, I made a large salad that I can put into tortillas for wraps throughout the weekend.
For anyone that knows me, I'm not a huge salad fan. I look at salad and compare it to a tasty burger ... it rarely wins. I scoured Pinterest for some salad inspiration and came across this Arugula Salad that I put my own twist on.
2 small apples
1/2 can of garbanzo beans
Tablespoon olive oil
Teaspoon Ranch Dressing
Dash of Salt & Pepper
Peel and chop the apples and drain the beans and then place into a large mixing bowl. Rinse the arugula and add to the bowl. Add oil, dressing and seasoning and toss well.
Verdict: The salad was the perfect mix of sweet and savory and I'll be eating these wraps all weekend long!
