Need a treat for your holiday party? Something sweet that tastes like Christmas? Eggnog Bread Pudding with a bourbon sauce is Christmas in a dish!
2 cups eggnog*
¼ cup butter
½ cup sugar*
1 teaspoon cinnamon (just a pinch less, if you’re not crazy about cinnamon) torn into pieces.
1/4 teaspoon nutmeg
¼ teaspoon salt
2 eggs slightly beaten
8 slices of cinnamon bread – I like Cinnabon Cinnamon swirl bread, but any will do!
½ cup raisins or dried cranberries
½ cup packed brown sugar*
½ cup butter
2 tables spoons whipping cream
3 to 4 tablespoons bourbon
Preheat oven to 350 degrees.
In a small saucepan heat butter and eggnog until hot.
Mix together cinnamon, sugar, eggs, and salt. Add and stir in bread pieces and raisins/cranberries. Pour into baking dish.
Bake uncovered for 40-45 minutes. (Insert a knife and if it comes out clean dish is done baking)
*I switch out traditional eggnog for low fat and sugar for splenda to make it a little less guilty or for a diabetic friendly treat! Splenda makes a great brown sugar blend that works perfect for the sauce too!
Mix sauce ingredients in saucepan and boil over medium heat. Stir consistently.
Store both sauce and bread pudding in refridgerator---but then you probably won’t have any left over to store ;). Happy Baking!
