When a craving hits, it is hard to kick. This past week I have been dying for a pancake so before I gave in and ruined my 30 day paleo challenge, I decided to make my own version of pancakes with a paleo twist!
A lot of people ask me what the paleo diet is. For those who want the short a sweet explanation: meat, vegetables, fruit, seeds, and nuts. No dairy, no grains, and no sugar or artificial sugar. Needless to say, I miss my coffee and creamer in the mornings.
Anyways, this recipe is super easy and only has 2 ingredients in the pancake mix! I like to top my pancakes with strawberries and 100% real maple syrup. This is one of my favorite paleo recipes that I will make even when we aren’t doing a paleo challenge!

Yields: 2 pancakes | Time: 10 mins
1 large ripe banana
1 large egg
In a bowl mash your banana. Add egg to bowl and mix until both ingredients are combined. Next you will need to grease your pan, I prefer to do this with Ghee which is simply clarified butter. Once pan is hot, pour in the banana and egg mixture. Once all edges are dry and you are able to, carefully flip over and cook until browned. Repeat with remaining mixture.
