Hi friends! We are still very much in the thick of summer and this heat! I recently found this delicious and light fruity salad that I just had to try. It is just as tasty as it is beautiful and if you love berries, then you will want to eat this all day long! I can't take credit for the recipe but wanted to share it incase you have any BBQ's coming out that you need to bring or make a side dish for, this will not disappoint! I am linking the recipe from The Slow Roasted Italian HERE but you can also see below for convenience. I did not use the exact creamer they specified, rather I used an organic, no sugar added, french vanilla.
Summer Berry Cheesecake Salad
This simple recipe Summer Berry Cheesecake Salad recipe comes together with just 5 ingredients. Rich and creamy cheesecake filling is folded into your favorite berries to create the most amazing fruit salad ever! Your family will go nuts over it.
prep time: 15 MINS cook time: total time: 15 mins
1 pound strawberries, hulled and cut into quarters
1 (9 ounce) container blueberries, washed and dried (remove stems)
1 (9 ounce container) raspberries, rinsed and dried
1 (8 ounce) package cream cheese
1/2 cup Simply Pure Vanilla Coffee Creamer or any creamer
1. Prepare berries and lay them on paper towels to dry while you prepare the cheesecake mixture.
2. In a medium tall bowl, using an electric mixer, whip cream cheese until it becomes smooth. It may bind up in the beaters, but continue as is and it will loosen up.
3. With mixer running slowly add creamer to the cream cheese. Add it about a tablespoon at a time and then mix until it becomes a smooth mixture and all of the creamer has combined into the cream cheese. Continue until all of the creamer has been added to the cream cheese. Whip until smooth.
4. Combine berries in a large bowl. Gently fold in cheesecake mixture until completely combined.
5. Chill until ready to serve or serve immediately.
DONNA'S NOTES 1. Do not pour all of the creamer into the cream cheese at once. It will get clumpy and no matter how long you beat it, it will stay that way. Trust me on this one. 2. If you have to substitute cream for the creamer, powdered sugar and vanilla would be the best swap. 1/2 cup heavy cream, 2 tablespoons powdered sugar and 1 teaspoon vanilla extract.
Managing With Only a Carry-On for Your Next Business Trip
Traveling for business already involves a number of challenges, and it’s even more difficult when your packing space is limited to a single carry-on.
Even the little things add up. You don’t want to forget about these when packing. An accessory subscription is perfect for purchasing all your toiletries and makeup in one place. Fortunately, we’ve put together some similar, effective packing tips to help you make the most of your luggage space.
Wear Any Bulky Clothes
If you’re packing anything that’s likely to take up a lot of space in your suitcase, consider wearing it on the plane instead. You’ll end up with more room in your suitcase, and you won’t have to deal with wrinkles on whatever you decide to wear.
Bring Neutral Colors
The easiest way to pack light for a business trip is to pack clothes that are easy to match with each other and wear for different events throughout the day. Vivid and striking colors are less likely to pair well than classic neutrals like gray, navy, and black. However, since summer is in full bloom, try a summer subscription box to get all your vibrant summer accessories.
With a color-coordinated wardrobe in your suitcase, you should also be able to make it through the entire business trip on a single pair of dress shoes. If you end up needing more, check out these tips for efficiently packing multiple pairs of shoes.
Take Two Carry-Ons
Depending on your airline, you may be able to bring two carry-on items rather than one—most allow for a carry-on suitcase plus a backpack or other small bag. This gives you even more space to work with as you try to fit those last-minute items into your luggage.
Leave Your Laptop Behind
You might be in the habit of taking your laptop with you wherever you go, but many hotels offer computers, and you can get much of the same work done on a tablet anyway. Tablets take up significantly less space than most laptops, and they’re just as effective for any tasks you need to take care of.
Use Hotel Toiletries
If things like shampoo and conditioner are taking up a large amount of space in your luggage, consider leaving them at home and simply using what’s available at your hotel. You can even call ahead or check their website to see what you’ll have access to in your room.
Packing for a business trip can be stressful, especially when you have a lot to take with you and limited space. These simple tips will help you maximize your luggage while bringing everything you need to feel confident and comfortable at your destination.
