One of the only things that gets me through clean eating is a flavorful recipe I can count on. One of my favorites is this Balsamic Glazed Asparagus.
One bundle of asparagus, washed and cut then laid in a non-stick pain. Spray with about 1/4 cup of balsamic vinegar, a 1/4 of a lemon squeezed on top, garlic powder, black pepper and dried minced onion to taste. Cook on Med-high until the vinegar begins to thicken and the asparagus is cooked to your liking.
If you are anything like me I ALWAYS want Asian food. This recipe always satisfy and has plenty of room for modification. You can add different vegetables, tofu, shrimp and even bacon; you can't go wrong!
Place olive oil in a medium sauce pan, add chicken with bone. Add tbs of soy sauce over chicken. In Small bowl, combine garlic powder, chili powder and chili flakes, mix. Sprinkle 1/2 of the mixture over chicken breast, cover with lid. Cook 5-7 minutes, flip chicken. Sprinkle the rest of mix over the chicken, cover again. Cook another 5-7 minutes, checking the chicken occasionally. You may continue flipping as desired. When chicken is finished cooking, remove, de-bone, cut into 1/2" chunks and set aside.
In a wok or large frying pan add 2-3 tbs olive oil OR wok oil, heat. Add onion, red pepper and 3/4 slaw mix, sauté until onions are transparent. Move vegetables to one side of the pan, add eggs to empty part of the pan and scramble. Note: You can cook eggs in another pan if preferred and then add them. Add rice, chili paste and chicken, mix together. Pour remaining soy sauce (1/4 cup) over, mix well. Continue to heat until desired texture is reached, usually 2-4 more minutes.
You may add more or less soy sauce to taste. Mushrooms, bacon, and bok-choy are just a few of my favorite additions to this awesome dish. Feel free to top with Sriracha and enjoy!
When you are all snowed in sometimes you have to make your own bit of happy! Thank goodness for our favorite brands being availiable at our local grocer!
You will need:
Starbucks Peppermint Mocha Coffee (or comprable)
2 tbs Coffee Mate Sugar Free Pepperment Mocha Creamer
1tsp hot fudge
1/8 tsp of cocoa or Nesquik
Brew Starbucks Peppermint Mocha Coffee as desired; pour in mug. Add 1-2 tbs of creamer and hot fudge; stir. Top with Rediwhip and sprinkle cocoa on top. Enjoy!
Ok, so maybe not WITH Anthony Bourdain but certainly with his favorite way to eat scrambled eggs!
I learned this recipe while watching one of his shows sometime last year and it has been on rotation in our family ever since.
Sour Cream + Bacon Scramble
Serves 2-3 People
You will need:
1/2 of a standard pack of bacon
2 tbs half + half
3 tbs of sour cream
2-3 green onions
Cut bacon into 1/2 " wide pieces and place in a medium frying pan. Fry bacon until cooked through; Can cook longer if desired. Drain most of grease from cooked bacon and leave on stove. Gently wisk eggs with half and half, pour over bacon. Cook at medium temperature, folding eggs over occasionally as you would any scramble; for fluffier eggs, fold less. When eggs are 3/4 of the way cooked ad 1/2 of the green onions and sour cream, folding together. Continue cooking until eggs are done; the sour cream will leave the eggs moist. Top with the rest of the green onions, add salt and pepper to taste. Great with sourdough toast on the side!
