What is diversity? Sometimes it’s what you see such as gender, skin color and physical abilities. But it can also be what you don’t see like religion, ethnicity, personality, beliefs and values. A person’s value is not related to their race, possessions, personal choices, financial standings or opinions. You are valuable because you are you.
And what really makes a ‘community’ is the fact that it values the dissimilarities in people. The idea of diversity encompasses acceptance and respect. It means understanding that each person is unique, and recognizing our individual differences. Our differences define us, allow us to make unique contributions to our group...to our society.
Now is the time to embrace this diversity. The message to spread love and understanding are more important than ever in our day and time. The history of intolerance is a long and brutal one where people who don’t fit a criteria and set of expectations are not treated the same.
We don’t need everyone to be the exact same carbon copy of one another. We should instead embrace and celebrate how special and different we already are. I look forward to the future of this group of women. I look forward to our future events. I look forward to us listening anf learning from one another. I look forward to seeing you.

Few weeks into teaching my kids at home because schools are closed due to the pandemic. And I see many people are concerned about students falling behind because of the schools being closed. Yes, they may fall behind when it comes to classroom education or
...they might learn an easier “old school way” to solve a simple math problem... 🤷♀️
But seriously, what if...
instead of falling “behind", this group of kids are ADVANCED because of this? Hear me out.
What if they enjoy family connection, they can be more creative and entertain themselves, they love to read, they love to express themselves in writing, through art, dance and music.
What if they enjoy the simple things, like their own backyard, a bike ride and sitting near a window in the quiet.
What if they notice the birds, the mornjng dew, the flowers blooming, and the calming renewal of a gentle rain shower?
What if this generation are the ones to learn to cook, to organize their space, to decorate, to build, to do their laundry, and keep a well run home?
What if they learn to stretch a dollar and to live with less?
What if they learn to plan out shopping trips and eats most meals at home.
What if they learn the value of eating together as a family and finding the good to share in the small delights of the everyday?
What if they focus on their health, enjoy exercise and appreciate each breathe.
What if they are the ones to place great value on our previously invisible essential support workers like truck drivers, grocers, cashiers, custodians, logistics, and health care workers and their supporting staff, just to name a few of the millions taking care of us right now while we are sheltered in place?
What if among these children, great leaders emerge who had the benefit of a slower pace, surrounded by those that love them the most, loving a simpler daily life while also having the benefits and advances of technology at their fingertips?
What if they truly learn what really matters in this life?
What if they actually end up AHEAD?
I actually realized that my child doesn't get enough one on one time within the education process to help him fully understand the lessons. The school has been relying on computers too much to assist in teaching that they are missing some key things. For example, my daughter is in kindergarten and they type in their answers so much that the teacher must have not noticed the HUGE pattern of my daughter writing her 5's backwards. My son knows answers but times out of his tests because he isn't a fluent typer - maybe that's why his grades are sufferring but he comprhends all when we review it at home? I may have realized these things along with other things had this mandatory virtual schooling process not happened.
The entire process has not only given me more time with my kids it has given me the confidence to consider homeschooling as a viable option in the future because I know now that I can do it and that it may actually be better for my kids!
The older I get them more I enjoy "day dates." Avoiding the crazy nights and appreciating all the local things South Florida has to enjoy. Recently, we took a quick drive to spend the day in Miami at the Frost Science Museum and an early dinner on the river at American Social in Brickell.
A day at the Museum: Frost Science
I love museums and I love aquariums. So I am a fan of The Phillip and Patricia Frost Museum of Science. It is a leading science museum, dedicated to sharing the power of science, sparking wonder and investigation, and fueling innovation for the future. Located in Downtown Miami’s waterfront Museum Park, Frost Science is divided into four buildings: the Frost Planetarium, Aquarium, and North and West Wings. Here, guests can learn about the core science behind living systems, the solar system and known universe, the physics of flight, light and lasers, the biology of the human body and mind, and much more. Guests can explore the world of science, technology, engineering and math (STEM) in an experiential setting with interactive exhibitions and unique shows. The Aquarium is by far my favorite part. Stroll Through Wynwood Walls
If in Miami on a pretty day, it is worth taking a stroll through Wynwood to look at the walls. Even if you have been before...go back! Enjoy art and creative expression. Dinner Date at American Social Brickell
Date days are not complete without a great dinner...usually early since we had a full day of activity and are ready for a relaxing night at home. So we decided to enjoy the views of the city from American Social's 3,000+ sq ft patio situated on the historic Miami River. It's hip yet has a romantic vibe too. The drink menu is extensive. I love a fancy margarita, so of course I had to try there version. Refreshing! The food is great and priced perfectly. We tried the pretzels, cobb salad and mushroom pizza. All good, but big portions, so we had leftovers for a late night snack...the date day that keeps giving!
Whether you are looking for dinner with a view, a social night out with friends, or a place to watch the "big game", American Social Brickell is a great spot! FYI- easy and affordable valet parking right by the door!

I love coffee. I love breakfast with m,y coffee. Sometimes I want a relaxing place, sometimes I need a spot to get work done, sometimes I need coffee for my coffee (free refills a must on this day) and sometimes I want a fancy breakfast experience. Yes, it is a great spot for beer. But did you know they have a great breakfast and is a very chill place to enjoy coffee?! Try to breakfast croissant - it's delicious!
Anne's Florist: Coffee and Work
There are multiple reasons to visit- flowers and wine bar BUT it also offers great coffee and sweet treats. The atmosphere is cute, cozy and smells delightful. Always quiet, so perfect to get some work done.
Andrews Diner: Coffee with Coffee
I love a good old fashion, traditional breakfast of eggs, bacon, hashbrowns, toast and COFFEE with unlimited refills. On those days, Andrews Diner is definitely a top choice. Good food, great price, friendly service and free coffee refills.
Shooter's: Fancy Coffee with Views
Ok, this is more of a brunch spot with good views to enjoy as you sip coffee followed by mimosa. But still a favorite of mine, so I couldn't leave it off. But be ready to spend some $$$. Do Saturday yoga to save $5! :) Read about my experience with that, here.
Hello Fresh is a weekly meal delivery subscription that sends healthy recipes and the pre-measured ingredients you need to make them at home. I saw a great deal on Facebook the week before Valentine's and thought, "Why not try it?" With such a good deal, it seemed silly not to test it out at least and since valentine's was coming up, I wanted to make a fancy meal.
So I ordered it to start my first Hello Fresh meal box as being delivered on FEBRUARY 14th! Which means I didn't need to make dinner reservations, spend a forutnue on a meal or event go to the grocery store. No fighting the crowds, no waiting for a table...just a delicvious meal that we got to cook together!
It worked out as perfectly as I had planned. PLUS we got two more delicious meals that week!
I highl;y suggest you try it out! I have two more weekd of nboxers coming, but I pushed them off to next month due to my travel schedule - another convenient way to plan your meals. The Fort Lauderdale Girl's Night Out Social for February was all about loving and supporting the women around us! It was great to see so many new women joining the event for the first time, I was blown away with the connections and authentic conversations had during the event.

FT LAUDERDALE WOMEN'S EMPOWER HOUR
A NEW component was added to the February Girl's Night Out to see how well everyone liked it. AND everyone agreed - IT WAS A FABULOUS PART OF THE NIGHT! About 60 minutes after the event started, I (Mandy) made a welcoming introductiona d overview of HITC & Girl's Night Out then introduced the featured businesses. Each business owner talk ab little about themself, their business and their why. Then I asked every woman in attendance to introduce themself and read the "empowerment question" I hgave them when they checked in. This ended up being a wonderful way to inside the women, connect with their passions and learn about eveyone's business in an interactive and personal way! I plan to add this component to each Girl's Night Out where the space allows it!

It's Valentin'e Week. Which makes me think about all the candy being sold and eaten. If you love candy but love sticking to your no candy resolution more, then you will love these no bake truffles. With a few common ingredients and simple steps I can enjoy a delicious sweet bite without sacrificing my goals. These truffles are perfect for an afternoon break or paired with morning coffee!
1. Chop unsweetened chocolate and set aside in a heat resistant bowl
2. Melt butter and stir in milk until well mixed
3. In a saucepan heat butter mixture with sugar substitute until melted but not boiling
4. Pour over chocolate and stir until smooth liquid
5. Let cool in refrigerator
6. Spoon and shape into balls then roll in walnuts
These past few days of cold weather had me dreaming of my Summer road trip to Key West.
