I would love to start share some of my adventures with you all. January 2019 is here, and this is the time of year where people start to focus on healthy eating. Everyone focusses on their summer bodies. We are all getting ready for the bathing suit and summer clothing. We all want to look our best. In our house we have started a healthy diet to try and shed some pounds. I want to share with you every month how we are doing with our diet and see how much we can shed. I will share my recipes with you and hope you will share yours with me. This will be a journey so join me on it. All my recipes will be for 2 servings.
Todays recipe is going to be a Meat Loaf. Let’s just say its not your momma’s meat loaf.
Prep Time 10-minute prep ready in 35 minutes.
What you will need: 4 garlic cloves, 1 zucchini, ½ cup panko crumbs, smoked paprika, 4 ounces of ground beef, 2 medium size sweet potato, 1 chili, 6 TBSP ketchup, 4TBSP butter, 2 tsp vegetable oil, salt and pepper.
