After a long weekend of celebrating birthdays with family and friends, we had an impromptu date night on Monday. It was so nice to have some time for just the two of us, so we checked out the brand new Burtons Grill that just opened in Sterling within the newly developed Cascade Overlook.
We sampled a few things from the menu and enjoyed the cozy feel of the brand new build. There's a nice size bar with a small adjoining lounge + private dining area in addition to the main dining room. Plus, there's an incredible patio adjacent to the fountains in the plaza. Our waitress said they soon would have live music on Wednesday nights -- plus, Wednesday night is 1/2 price bottles of wine. Perfect for a night on the patio! (Might be perfect for one of our Girls Night Out events!)
Our favorites from the menu were the tuna tartare, beet salad, crab crusted haddock (a must try!), and the Orchard Sangria. I was impressed to find out that the kitchen is a completely made-from-scratch kitchen -- meaning everything on the menu is able to be customized. The restaurant also showcases vegetarian, gluten-free, and Paelo menus.

Amazon announced today that its Prime Now one-hour delivery service is expanding to Northern Virginia from Springfield to Arlington to Alexandria. The ultra-fast service, offered exclusively as a benefit to Prime members, provides one-hour delivery on tens of thousands of daily essentials from staples like paper towels, milk or ice cream, to electronics such as laptops and Kindle devices.

The long days of summer are almost over and before you know it alarms will be buzzing, buses will be missed, and the grueling 20 minutes of reading every night will begin.
Once Labor Day passes and the first day of school starts, our house will finally be back on a schedule and I'll be doing my best to keep us in check. To make it easier on myself in the fall, I always try to cook a meal for Sunday dinner that will last long enough to give us a day or two of leftovers. Usually, I go for a slow cooker or casserole that can easily be reheated.
This week, I've partnered with Whole Foods Market for some back to school, back to basics meals. After spending 5 days at the beach, I came home last night to a completely empty refrigerator. So it was perfect timing when I received a delivery of groceries today to get me started on a delicious back to school dinner plus some lunch box ideas!
Back to Basics: Chicken Tetrazzini Dinner
Whole Foods sent me the ingredients and recipe card for Chicken Tetrazzini. Sounds pretty intimidating, right? I mean, you have to make your own white sauce for this! Don't let the recipe card fool you, it was actually super easy. However, it did require a few pans to get dirty. Most of the ingredients were 365 Everyday Value organic items -- the Whole Foods Market store brand.
Cooking oil spray
Salt and pepper to taste
1/2 pound whole wheat or spelt angel hair pasta
1/2 tablespoon butter
1/2 yellow onion, finely chopped
1 (8-ounce) package sliced mushrooms
1 cup frozen peas
1 tablespoon extra-virgin olive oil
2 1/2 tablespoon flour
1 cup low-sodium chicken broth
1/4 cup low-fat milk
1/8 teaspoon ground nutmeg
2 cups chopped cooked boneless, skinless chicken breast
6 tablespoons grated Parmesan cheese, divided
4 tablespoons finely chopped chives, divided
Preheat oven to 375°F. Spray a 2-quart casserole dish with cooking spray; set aside.
Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 5 minutes; drain well and transfer to a large bowl.
Meanwhile, heat butter in a large skillet over medium high heat. Add onions, mushrooms, salt and pepper and cook, stirring occasionally, until softened, about 5 minutes. Stir in peas and cook 2 minutes more. Transfer to bowl with pasta and set aside.
Heat oil in a small saucepan over medium heat. Whisk in flour until smooth then slowly whisk in broth and cook, stirring constantly, until thickened. Stir in milk, nutmeg, salt and pepper and cook 1 minute more. Add milk mixture to bowl with pasta and mushroom mixture along with chicken, 4 tablespoons of the cheese and 2 tablespoons of the chives and toss gently to combine. Transfer to prepared dish, sprinkle with remaining 2 tablespoons cheese and 2 tablespoons chives and bake until hot throughout and golden brown on top, about 30 minutes.
Back to School: Lunchbox Ideas
As much as I love my child, there is nothing I hate more than rushing around in the mornings to pack his lunch. Yes, I could pack the night before but that would mean that I have to be an organized parent and not a procrastinator (I think I've managed to do this twice in my life). So, we fight the fight every morning to make sure that a lunch and snack are packed before he heads out the door.
Here are a few quick lunchbox ideas using Whole Foods 365 Everyday Value organic items:
Lunchbox 1: Colby Jack cheese stick, organic fruit punch, celery sticks, clementine, applesauce, Quack'n bites, and two slices of turkey rolled up.
Lunchbox #2: Half of an almond butter and strawberry jelly sandwich, dark chocolate chip granola bar, popcorn, carrots, banana and a mini water.

Of course, these shakes wouldn't be complete without a order or fries and onion rings to accompany them. The bacon cheese fries are amazing... and dipped in ranch.. OMG. But, my favorite thing, which is not pictured, was the sweet potato fries. They were crispy and sweet and delicious. Served with BBQ as a dipping sauce... Are you counting my calories yet?
For our main entrees, I really couldn't think of eating any more, but I had to try their famous burgers topped with bacon and cheese. It's good to know that if you are watching carbs (or if you're going to spend your calories on a shake or appetizer) you can order your burger "lettuce-wrapped" and then get the dressings on the side. This might save you some cardio later...but let's be serious, no one goes to Johnny Rockets to cut calories.
