I must admit that I was unaware there was such a day, although, considering all the other days (National Margarita or Donut Day, anyone?), I shouldn't act surprised.
I don't know about y'all, but I don't need a reason to eat a handful (read: Costco bag amount) of shelled, salty pistachios. But if you are looking for an excuse, or a creative way to get your nutty quota in for the day, I have just the recipe. Clipped 15 years ago from the Gourmet Magazine, this recipe is practically a gem!
Chocolate and Pistachio Cookies
makes about 120 cookies (supposedly)
Total time: 1 to 2 hours
6 oz. Fine quality bittersweet chocolate (not unsweetened)
1 1/2 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
1 stick plus 1 TBSP unsalted butter, softened
1 1/4 cups packed light brown sugar
1 large egg
1/2 tsp vanilla
1 1/3 cups salted shelled pistachios, finely chopped
